The processing techniques, passed down through generations, are reflected in the final result: an extraordinary pizza, taller and softer in its compactness yet crispy on the palate, ranging in length from half a meter to two meters, with a dough thickness in the center not exceeding 5 millimeters and a crust that does not exceed 2 centimeters.
Its secret also lies in the rigorous baking in wood-fired ovens, handmade with Sorrento clay refractory bricks, characterized by a dome slightly higher than traditional ovens and a baking time averaging between 2 and 5 minutes at an optimal temperature of 350 degrees Celsius.
Compared to Neapolitan pizza, the “Pizza di Vico” also differs in the order in which the toppings are placed. It starts with fior di latte cheese and ends with tomato sauces and other ingredients. Finally, the peels, the tools used to bake and control the pizza, are rectangular and wooden, allowing for the best insertion of the pizza “meter” into the fire mouth of the oven.
